Pizza topped with chicken, mushrooms, bell peppers and red onion - yum!

PIZZA SAUCE: | |||

1 | can | (14.5 oz.) Italian style diced tomatoes | |

1 | can | (6 oz.) tomato paste | |
|
|||
1/4 | cup | olive oil | |

1/4 | cup | Parmesan cheese | |
|

2 | tablespoons | sugar | |
|
|||
1 | tablespoon | balsamic vinegar | |
|
|||
salt & pepper to taste | |||
|
|||

1 | prebaked (12 - 16 oz.) pizza crust | ||
|
|||
4 - 5 | chicken tenders | ||
|
|||
1 | tablespoon | olive oil | |
|
|||
5 | thin slices of red onion | ||
|
|||
1 | bell pepper, sliced in circles | ||
|
|||
1/2 | cup | sliced mushrooms | |
|
|||
1 1/2 | cups | shredded mozzarella cheese | |
|
Prepare fresh pizza sauce by combining all pizza sauce ingredients in a bowl and set aside for use later. Cut chicken tenders into quarters and heat in a skillet on medium high heat with 1 tablespoon olive oil. Saute chicken tenders until golden brown on all sides, about 5 minutes. Evenly spread 1/2 the pizza sauce on crust and freeze the remaining pizza sauce for later use. Place 1/2 the shredded mozzarella cheese on top of the sauce. Evenly spread the red onion, bell pepper, and sliced mushrooms on top of the cheese. Place the sauteed chicken tenders on the vegetables and cover with remaining mozzarella. Bake pizza in a 350 F. oven for 15 minutes or until the cheese and toppings are hot.
